Question
My 33 year old wife has gestational diabetes and is on a diet of 210 grams of carb per day. She eats what she is supposed to, but her readings come out higher. Do protein and carbs intermingle with each other?Answer
High-fat protein selections (cheese, beef, fatty cuts of pork, etc.) can delay the absorption of carbohydrates, making blood glucose higher for a longer period of time. Your wife should spend some time with the dietitian to make sure her portions of carbohydrates are correct and that her protein selections are leaner.
