must I use unbleached flour?

Question

My 62 year old husband has type 2 diabetes. Must I use unbleached flour or is bleached, all purpose flour okay?

Answer

It doesn't matter as far as diabetes is concerned. Both types of flour contain the same number of carbohydrates per serving. Bleached flour is obviously more processed and has a "whiter" look to the flour.
