Question

My 33 year old wife has gestational diabetes and is on a diet of 210 grams of carb per day. She eats what she is supposed to, but her readings come out higher. Do protein and carbs intermingle with each other?

Answer

High-fat protein selections (cheese, beef, fatty cuts of pork, etc.) can delay the absorption of carbohydrates, making blood glucose higher for a longer period of time. Your wife should spend some time with the dietitian to make sure her portions of carbohydrates are correct and that her protein selections are leaner.
